Amlou is a traditional Moroccan spread made from almonds, argan oil, and typically honey, but in this vegan version, we'll be using date syrup. This spread is rich, nutty, and perfect for dipping or drizzling.

### Ingredients:

- 2 cups (250g) raw almonds

- 1/2 cup (120ml) organic argan oil (preferably from Marrakech)

- 1/4 cup (60ml) date syrup

- 1/2 teaspoon sea salt (optional)

- 1/2 teaspoon cinnamon (optional)

### Instructions:

1. Toast the Almonds:

- Preheat your oven to 350°F (175°C).

- Spread the raw almonds evenly on a baking sheet.

- Toast the almonds in the oven for about 10-15 minutes, until golden brown and aromatic. Stir occasionally to ensure even toasting.

- Let the almonds cool completely.

2. Grind the Almonds:

- Once the almonds have cooled, place them in a food processor or high-speed blender.

- Pulse the almonds until they are finely ground, eventually forming a paste as the natural oils are released. Scrape down the sides of the processor as needed.

3. Add Argan Oil:

- While the processor is running, slowly add the organic argan oil.

- Blend until the mixture becomes smooth and creamy. You can adjust the consistency by adding more or less argan oil.

4. Sweeten with Date Syrup:

- Add the date syrup to the almond mixture.

- Blend until well incorporated, adjusting the sweetness if necessary by adding more date syrup.

5. Optional Seasoning:

- For added depth of flavor, mix in a pinch of sea salt and a dash of cinnamon. Blend again to fully incorporate.

6. Serving:

- Transfer your vegan amlou to a jar or airtight container.

- Serve at room temperature with fresh bread, toast, or as a dip for fruit. It’s also delicious drizzled over pancakes, waffles, or desserts.

7. Storing:

- Store the vegan amlou in a cool, dark place or refrigerate. It should last several weeks.

### Tips:

- **Argan Oil:** Be sure to use culinary-grade argan oil, known for its rich, nutty flavor LIKE OURS.

- **Almonds:** You can use blanched almonds for a smoother texture, but leaving the skins on adds extra fiber and nutrients.
