Description

This olive oil comes from five typical varieties of the AOP from the Valley of Baux-de-Provence: Aglandau (or Béruguette), Grossane, Salonenque, Picholine, and Verdale.

Harvested during the veraison period from October to December, the olives are promptly transported to the mill and stored in crates that protect them from light and oxygen for several days. Under these conditions, the delicate process of anaerobic fermentation begins, allowing the olives to develop their unique flavors. To achieve the rich taste reminiscent of the black olives processed by traditional stone mills, a combination of craftsmanship and sensitivity to the olive's typicity is essential.

This olive oil reveals all the characteristic aromas of the AOP: candied olives, black tapenade, cocoa, pepper, and truffle. On the palate, it is balanced and intense, offering a delightful sensation of sweetness. It pairs perfectly with green vegetables or in salads, enhancing any dish with its exquisite flavor profile.

THE CELLAR

The olive oil from Château Romanin comes from a unique estate featuring an extraordinary underground cellar, designed in 1992 by architect Serge Hennemann. Built into the rock and inspired by astronomical cycles (sun, moon, solstices), this cellar combines contemporary materials (wood, concrete, steel) with ancestral craftsmanship. Its Gothic structure, with arches and sculpted columns, creates a space that amplifies the qualities of the estate’s wines. This "cathedral cellar," oriented according to terrestrial magnetism and in harmony with the spirit of the place, also resembles an astronomical observatory, echoing the rhythms of the seasons. Within, large wooden vats hold wines that embody generosity, depth, and amplitude.

Inside, a spiral staircase winds up three floors, leading to a green-roofed dome with a strategic view. From this elevated point, one can enjoy a 360° panorama of the Alpilles, the vineyard, the 13th-century Château Romanin ruins, Mont Ventoux (the "Giant of Provence"), and the gliders circling above. This remarkable cellar also houses a wine library created by Anne-Marie and Jean-Louis Charmolüe, preserving the estate's history and offering a space for aging vintages, tastings, and convivial gatherings.
